Citrus Salad with Shrimp and Fennel

Ingredients
- 1/4 C Balsamic vinegar
- 2 t mustard
- 1 t garlic, chopped
- 2 t lemon juice
- 2 t lime juice
- 3/4 C olive oil
- 1 T honey
- 1 lb shrimp, cooked, halved lengthwise
- 16 ea orange segments
- 8 ea red grapefruit segments
- 2 ea fennel bulbs, thin slice
Options
- 4 C spring salad mix
- 4 oz goat cheese, crumbled
Instructions
- Whisk together the vinegar, mustard, garlic, lemon juice, lime juice, olive oil and honey to form a dressing. Season to taste.
- Plate the fennel, top with the orange and grapefruit segments, place the shrimp on top and drizzle with the dressing.
- Option: Toss the spring mix with the dressing, plate, then garnish with the remaining ingredients, including the goat cheese.
