Citrus Salad with Shrimp and Fennel

  1. Whisk together the vinegar, mustard, garlic, lemon juice, lime juice, olive oil and honey to form a dressing. Season to taste.
  2. Plate the fennel, top with the orange and grapefruit segments, place the shrimp on top and drizzle with the dressing.
  3. Option: Toss the spring mix with the dressing, plate, then garnish with the remaining ingredients, including the goat cheese.
